I am exploding with things to share with you this week!! I want to start off right away by sharing a couple recipes with you. I’ve shared the oat bar and granola recipes with so many that I figured I’d just put them on here for everyone. I eat the oat bars every morning for breakfast and I munch on the granola all day long.
2c Rolled Oats
1/3c Apple Sauce
3 Ripe bananas
1c dried fruit (raisins, craisins, dates…)
2/3c sunflower seeds
1/4c soy, rice, almond milk (I used unsweetened soy milk because I don’t want the added sweetener but I bet vanilla milk would taste great)
2 shakes of Cinnamon
Mash it all together. Press into casserole pan and bake at 350 for 15-20 minutes. Cut into bars and store in the fridge
2c Rolled Oats
1/2c Flaked coconut
2/3c sunflower seeds
1c dried fruit (raisins, craisins,
3T Veg oil
Mix everything together but the fruit. Spread out on a cookie sheet and bake at 350 for 20 minutes tossing every 5 minutes so you don’t burn the coconut. Throw in the dried fruit for the last 5 minutes. Store in air tight container. Use to munch on as a snack or as cereal.
I’ve been trying to make a more concerted effort to walk and move lately. So one night last week I did what I never thought I would do…I got out of my comfy chair, changed from my jammies into shorts and went for a walk! And then, just to make matters worse, I jogged a little during my walk. What is happening to me!? It was really kind of cool, I was just sitting in my chair reading and I just really felt the physical desire to go for a walk. I definitely tried to ignore it but I finally realized it was truly the Holy Spirit prompting me to get up and do that which my heart wants to do but my body really doesn’t…exercise. The other wonderful outcome of my walking was an hour praising God through music and praying for people around me. It was truly a lovely experience. 🙂
Psalm 37:4 says, “Delight yourself in the Lord and He will give you the desires of your heart.” As I’ve grown closer to God and He’s removed so many idols and changed so many habits, in the back of my head has been weight. As with many people, I’ve tried various ways to lose weight and I had kind of given up and just figured that I would just stay where I was or have surgery to “fix” the issue.
Then I started praying about my weight. Praying that God would help me lose the excess and get in shape. My heart’s desire is to be in better physical shape so that I can serve Him better. I don’t want my physical shape to be a reason I can’t go do something and reach people for Him. I am convinced it was His amazing plan to get me to do the 10-day fast in July just so that I could see how much better I would feel not full of all the unhealthy stuff I was eating. I would have never made it through a raw vegan diet for any length of time without God. I would never have continued being vegan without God. I would never have gotten up out of my comfy chair and jammies without God. As I am seeking to delight myself in Him and make His gift of this body more usable, He is giving me the desires of my heart. 🙂 Thank you Jesus!!
Cooking well takes time so I encourage you to be patient and set aside time to cook. Healthy food isn’t drive-thru food and there is just no way around that fact. I cook for about 3 hours on the weekends so that I can have lunches and snacks all frozen and ready to grab-and-go each day. I do my cooking all at one time but you really could spread it out. If you think, “Geez, there is NO way I have time for that!!” Then pray about it and see what God does. I am convinced that God wants us healthy and eating well.
I want to give a shout-out to Savrika Tea room in Kirkland. (115 Kirkland Ave) This lovely tea room is wonderful. They have TONS of teas they can brew for you as well as vegan desserts. Not all their desserts are vegan but they do carry a Salted Caramel Brownie that is just down right amazing!! Sylvia went there one night last week and had just a lovely time hanging out, eating dessert and playing a game.

Live in God’s love, grace, peace and mercy. Ask Him to help you eat better and exercise more. If you already do both, then praise Him for His hand in your life and find ways to encourage others.
